Since my traveling days are numbered now that I’m back to work, my upcoming posts will be a bag of tricks…a surprise every time! Ah, yes I can feel your excitement.
Today’s post…cooking. Gasp! After a long day at work (or home!) I am just tickled pink with excitement to fire something up on the stove and cook a fancy dinner. SAID NO ONE EVER!!! I do enjoy cooking during my time at home during the summer, but once August hits I have to get serious about meal planning because if I don’t I’ll be knee deep in meal-time panic come Monday morning. As much as I
enjoy loathe playing chicken with 20 million other carts in Central Market on a Sunday afternoon, I’ll regret it if I don’t go.
I’m always looking for new meal ideas, so I thought I’d post our family fav go-to’s below. Most of our meals come from the Wheat Belly cookbook. If you haven’t heard of Wheat Belly, I highly recommend it. It’s not a diet, but more of a lifestyle. We don’t live and die by it (especially on the weekends), but during the week I try to stick to it as much as possible and I truly do FEEL better. I actually read the whole book and it was incredibly eye opening. After I had Mila, I had a tough time getting to the gym as much as I’d like. (Duh, you have a baby and NEWSFLASH nothing-is-easy-anymore!!) So, in the meantime I tried my best to make healthy choices and can honestly say that was what helped the weight come off.
So here’s a few things we’ll be having this week…Check ’em out!
1 – Turkey Burgers: I use extra lean ground beef mixed with diced red onion, cayenne pepper, onion powder, garlic powder, a dash of cumin, pinch of sea salt and pepper. Add some Worcester and Cholula ( depending on how spicy you like it). Where I used to use the standard SEASON-ALL on the seasoning aisle, I’ve made the healthy switch to only use the real deal spices. For a side, I typically bake sweet potato fries to go with it, similar to the ones below.
Thinly slice potato, drizzle EV olive oil and sea salt. Bake at 350 for 30 minutes, flipping potatoes half way thru. For crispy potatoes, turn on BROIL for 2 minutes. Don’t leave it any longer or you’ll have blackened potatoes! No bueno.
2 – Taco Lettuce Wraps – Extra Lean Ground Turkey, season to taste using (cumin, cayenne pepper, red chili powder, garlic powder) 1 cup salsa, 8 large lettuce leaves (such as Bibb) Taco toppings: chopped avocado, shredded cheddar cheese, salsa, chopped tomatoes and sour cream (I don’t use, but you could). Cook the meat and seasoning mix, reduce heat to medium and stir in the salsa and cook for 3 more minutes or until most of the liquid has evaporated.
3 – Spaghetti Squash with Meat Sauce – Cut the Squash in half long ways and put in the microwave for about 12 minutes. I use extra lean ground turkey. Cook the meat and mix in your favorite marinara sauce. I love an Arrabiata sauce because it has a little kick to it. Back to the squash – Use a fork to peel it out. It will come out looking exactly like spaghetti. Ta-Da! Sprinkle a little bit of parmesan cheese on top and you have yourself a delicious little meal!
And Voila, there you have it! This morning I’ll be attempting a 5 am workout (update: I made it!) and then happily skipping into work. More details on that later.
